My friend Kae and I had a housewives day last weekend. We baked some delicious gluten-free cake! We baked 2 – 8 inch round cakes drizzled with rum glaze (so we could each have one). Yummy!! Hubby and I added strawberries and smiley face whipped cream to the top and it was amazing!

Yellow Cake Recipe (From Artisanal Gluten-Free Cooking)
1 3/4 cups sugar
3/4 cup (1 1/2 sticks) salted butter (softened)
2 tsp GF vanilla extract
2 eggs
3 cups Namaste Gluten-free Baking mix
2 1/2 tsp GF baking powder
1/2 tsp salt
1 1/4 cups milk
Pre heat oven 350 degrees
Grease 2 - 8 or 9 inch cake pans
Cream sugar, butter, and vanilla with mixer. Add egg and mix to incorporate
Combine flour, baking powder and salt in separate bowl.
Add some flour and then some milk to creamed butter/sugar mix. Repeat until all flour and milk are incorporated.
Divide the batter between the 2 pans. Bake 30-35 minutes (until a wooden toothpick comes out clean).
Cool fully in pans then transfer them to wire rack.
Rum Glaze
1/2 cup butter
1/4 cup water
1 cup white sugar
1/2 cup of rum
Melt butter in sauce pan, stir in water and sugar. Boil 5 minutes stirring constantly. Remove from heat and stir in rum. Drizzle over cake.
