Love at the U

A few weeks ago I drove up to the University of Washington to pick up my Panda.  While he was waiting for me, he surprised me by getting us each a milk shake.

We goofed around on campus a little before heading home (read: I goofed around taking pictures and Panda tried not to look too annoyed).  How annoyed could he really be?  He knows how much I love cute animals…

I followed this duck around for about 5 minutes trying to get some good shots because he was so adorable and because a. he was not flying away and b. he was making the most fabulous slurping noise in the water.

UDUB is really a beautiful place for a cute date!

Vanilla Cake with Rum Glaze (gluten-free)

My friend Kae and I had a housewives day last weekend.  We baked some delicious gluten-free cake!  We baked 2 – 8 inch round cakes drizzled with rum glaze (so we could each have one).  Yummy!!  Hubby and I added strawberries and smiley face whipped cream to the top and it was amazing!

Yellow Cake Recipe (From Artisanal Gluten-Free Cooking)

1 3/4 cups sugar

3/4 cup (1 1/2 sticks) salted butter (softened)

2 tsp GF vanilla extract

2 eggs

3 cups Namaste Gluten-free Baking mix

2 1/2 tsp GF baking powder

1/2 tsp salt

1 1/4 cups milk

Pre heat oven 350 degrees

Grease 2 – 8 or 9 inch cake pans

Cream sugar, butter, and vanilla with mixer.  Add egg and mix to incorporate

Combine flour, baking powder and salt in separate bowl.

Add some flour and then some milk to creamed butter/sugar mix.  Repeat until all flour and milk are incorporated.

Divide the batter between the 2 pans.  Bake 30-35 minutes (until a wooden toothpick comes out clean).

Cool fully in pans then transfer them to wire rack.

Rum Glaze

1/2 cup butter

1/4 cup water

1 cup white sugar

1/2 cup of rum

Melt butter in sauce pan, stir in water and sugar.  Boil 5 minutes stirring constantly.  Remove from heat and stir in rum.  Drizzle over cake.

Happy Easter and Happy Birthday to my Little Brother!

In the 4 years we have been together, this is the first Easter basket I have made for my hubby.

It has only the good stuff in it!  The little chick tweets.  I thought the cat might get a kick out of it.  If we get any good shots of the kitty fooling around with it I’ll be sure to post them.

I would love to wish my little brother a VERY happy 23rd birthday!  Look how handsome he looks in his snappy uniform (Far Left).

My Friends at Alki

After my students got so excited about all of the shells and rocks my teacher friend and I brought back from Alki, we decided to have a family outing with our students and their parents.

This past Saturday we met at the beach at 9am.  It was blustery and cold to say the very least but the friends and families who came enjoyed it just the same.

Here are a few of the shots I took this weekend of my little people exploring the beach.

Our friends had a great time and I certainly enjoyed spending some time outside of school with my families.

Eastside Firefighters Pipes and Drums

Last weekend I happened upon this group at A Terrible Beauty restaurant in West Seattle.  They were AMAZING!  And really, what is better than some firefighters in kilts playing Irish music?

Firefighters are not usually my forte because I come from a family full of them.  It just seems weird.  But these guys… Hello!  They won my heart with their version of Amazing Grace.  It gave me goose bumps.

They are doing a pub crawl today in the Seattle area if you’re into that sort of business.  You can find the information here.
