Naturally Gluten-Free Delight: Broccoli Rice Quiche

This is a yummy, yummy, so delicious dish I have been enjoying since childhood.  My Mom and I would end up eating almost the entire thing between us because my siblings weren’t the biggest fan of Quiche.  More for me!  Hubbs was a little apprehensive at first but enjoyed it (much to both our surprise).  So here for you, a delectable image and the recipe.

Broccoli Rice Quiche

(recipe from Weight Watchers)

1 1/2 cups hot cooked rice (white or brown)

3 eggs (I ended up using more like four eggs because I used egg white product.  Made from real eggs lol)

3 oz. grated cheddar cheese (3/4 cup).  I used a mixture of sharp and medium cheddar

Salt

Pepper

1 1/2 cups broccoli – thawed

3/4 cup sliced mushrooms

1/4 cup plus 2 tbsp milk

Combine rice with 1 slightly beaten egg, 1/2 the cheese and salt.  Press into greased pie pan.  Beat other eggs slightly and add other (except cheese) ingredients.  (that is where I added the extra egg) Pour into rice.  Bake 375 degrees for 20 minutes.  Add remaining cheese and bake for another 10 minutes.

I added diced tomatoes to the top and next time I think I will add some ham to please the Husband.

There you go, a delicious naturally gluten-free dish.
