Gluten-Free Two Minute Mug Brownies

My girlfriend sent me this recipe knowing how I need my sweets.  I was really excited to try it out.  It did not quite make it to the brownie stage.  Mine ended up more like the very thick hot fudge stage.  I still ate it and it was actually delicious with a big glass of milk!  The problem may have been that I used a glass mug instead of a ceramic one.  I will definitely be trying this again and I’ll let you know about my future results.

Gluten-Free Two Minute Mug Brownies

1/4 cup gluten-free flour

1/2 cup packed brown sugar

2 tbsp unsweetened cocoa powder

pinch of salt

2 tbsp canola oil

2 tbsp milk, coffee or water

Stir together dry ingredients (in mug) until there are no  lumps.  Stir in oil and milk until you have a thick paste.  Microwave on high for 1 minute.  Check after 30 seconds… all microwaves are different.  It will be done when it is a spongy consistency on top but gooey inside.  Enjoy Warm!!

    Yowza! I love chocolate and sweets a lot, too, but we are a microwave-free family. I’ll have to stick to the regular, bake-for-an-hour brownies. No biggie! 🙂

  3. Bake for an hour brownies are so very delicious and should never be discredited! I am proud of you for having no microwave. Ours broke and we made it almost a month without one. It just takes a little more planning and some extra dishes. But totally do-able.

      It is totally do-able! I just find that food tastes so much better when it’s cooked in a pot instead of in the microwave, but maybe I’m just imagining things. 😉
